Preparation
- Start by grilling or roasting the chicken if it is not already cooked.
- In a large bowl, combine the diced chicken, sweet corn, diced cucumber, and red onion.
- In a separate smaller bowl, mix the mayonnaise, Greek yogurt, lime juice, chopped cilantro, smoked paprika, salt, and black pepper.
- Pour the dressing over the chicken mixture and stir gently to combine.
- Taste and adjust seasoning if needed.
- If you like, add crumbled feta cheese on top before serving.
Notes
Serve cold or at room temperature. It makes an excellent main dish or a side. Best consumed within 2-3 days when stored in an airtight container. Discard if left out at room temperature for more than two hours.
