  • 2 cups grilled or roasted chicken, diced Use leftover chicken for faster preparation.
  • 1 cup sweet corn, grilled or canned Opt for fresh corn when in season for best flavor.
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
Dressing ingredients
  • ½ cup mayonnaise You can use yogurt alone for a lighter dressing.
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika Adjust spices according to taste.
  • 1 teaspoon salt To taste.
  • ½ teaspoon black pepper To taste.
  • Optional: crumbled feta cheese for garnish

Method
 

Preparation
  1. Start by grilling or roasting the chicken if it is not already cooked.
  2. In a large bowl, combine the diced chicken, sweet corn, diced cucumber, and red onion.
  3. In a separate smaller bowl, mix the mayonnaise, Greek yogurt, lime juice, chopped cilantro, smoked paprika, salt, and black pepper.
  4. Pour the dressing over the chicken mixture and stir gently to combine.
  5. Taste and adjust seasoning if needed.
  6. If you like, add crumbled feta cheese on top before serving.

Notes

Serve cold or at room temperature. It makes an excellent main dish or a side. Best consumed within 2-3 days when stored in an airtight container. Discard if left out at room temperature for more than two hours.
