Ingredients
  

For the Chicken Marinade
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 large chicken breasts
For the Bowl Assembly
  • 2 cups cooked rice (white or brown) Prepared according to package instructions
  • 1 cup black beans (rinsed and drained)
  • 1 cup corn kernels (grilled or canned)
  • 1 cup cherry tomatoes (halved)
  • 1 medium avocado (sliced)
  • 0.25 cup red onion (finely diced)
  • as needed Fresh cilantro (for garnish)
  • as needed Lime wedges (for serving)

Method
 

Preparation
  1. Whisk olive oil, lime juice, and spices in a bowl to make the marinade.
  2. Coat the chicken in the marinade and let it rest for at least 15 minutes or up to 2 hours for more flavor.
Cooking
  1. Grill or pan-fry the chicken for about 5-6 minutes on each side until it is cooked through. Let it rest for a few minutes before slicing.
  2. While the chicken is cooking, prepare the rice and cut the toppings.
Assembly
  1. Assemble the bowls by adding rice as the base, topped with black beans, corn, tomatoes, avocado, and sliced chicken.
  2. Finish with a sprinkle of cilantro and serve with lime wedges.

Notes

Marinating the chicken longer will enhance its flavor. Feel free to customize with additional toppings like jalapeƱos, cheese, or sour cream. To make it even quicker, use pre-cooked or rotisserie chicken. Store any leftovers in an airtight container in the refrigerator for 3-4 days.
