For the Marinade
  • 1 lb chicken breast, cut into chunks Use boneless, skinless chicken breast for best results.
  • 1/2 cup ranch dressing
  • 1/4 cup grated Parmesan cheese Use freshly grated for best flavor.
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Wooden skewers, soaked in water Soaking prevents burning on the grill.

Method
 

Preparation
  1. Start by cutting the chicken breast into bite-sized chunks.
  2. In a bowl, mix the ranch dressing, grated Parmesan cheese, minced garlic, salt, and pepper.
  3. Add the chicken chunks to the marinade, making sure each piece is coated well. Let it marinate for at least 30 minutes.
Cooking
  1. Preheat your grill or grill pan over medium heat.
  2. Thread the marinated chicken onto the soaked wooden skewers.
  3. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serving
  1. Once done, remove the skewers from the grill and let them rest for a few minutes before serving.

Notes

These chicken skewers are great served hot off the grill. You can enjoy them alone or with a side of fresh vegetables, rice, or a salad. Drizzling extra ranch dressing on top can add an extra burst of flavor.
