Ingredients
  

Vegetables
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 large ripe mango, diced Make sure to use a ripe mango for the best sweetness and flavor.
  • 1/4 cup red bell pepper, diced
  • 1/4 cup cilantro, chopped Fresh cilantro recommended; can substitute with parsley if desired.
Dressing
  • 1 lime juiced
  • 2 tablespoons honey or agave syrup Adjust based on taste preference.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the shredded cabbage, carrots, mango, red bell pepper, and cilantro.
  2. In a small bowl, whisk together the lime juice, honey, salt, and pepper.
  3. Pour the dressing over the slaw mixture and toss until everything is well combined.
  4. Allow to sit for 10 minutes before serving to let the flavors meld.

Notes

If you have leftovers, store the Mango Slaw in an airtight container in the refrigerator. It is best enjoyed within 1-2 days for optimal freshness. Keep in mind that the texture may soften over time, so it’s best to eat it soon after making.
