Ingredients
  

For the Bowl
  • 4 cups Potatoes, cubed Make sure to cut into even cubes for even cooking.
  • 1 lb Ground meat (beef, turkey, or chicken) You can also use shredded chicken or plant-based substitutes.
  • 2 tbsp Olive oil
  • 2 tbsp Taco seasoning Adjust to taste.
  • 1 cup Cheese (shredded cheddar or your choice)
  • 1 cup Sour cream
  • 1 whole Avocado, sliced
  • 1 cup Cherry tomatoes, halved
  • 1 cup Lettuce, shredded
  • 2 stalks Green onions, chopped

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and cube the potatoes, then toss them with olive oil and taco seasoning.
  3. Spread the potatoes out on a baking sheet and roast for 25-30 minutes until crispy.
  4. In a skillet over medium heat, cook the ground meat until browned, adding extra taco seasoning to taste.
Assembly
  1. In a bowl, layer the roasted potatoes, cooked meat, cheese, lettuce, cherry tomatoes, and avocado.
  2. Top with sour cream and green onions.

Notes

Store leftovers in an airtight container in the fridge. Best enjoyed within a few days. Keep potatoes and toppings separate to avoid sogginess. Feel free to mix and match toppings to your preference.
