For the Slaw

Method
 

Marinate and Prepare
  1. In a bowl, mix the soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger.
  2. Add the chicken thighs to the marinade, coating them well. Let the chicken marinate for at least 30 minutes in the refrigerator.
Cook and Assemble
  1. Preheat a grill or skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes on each side, or until fully cooked.
  2. While the chicken cooks, prepare the slaw by mixing the shredded cabbage, julienned carrots, mayonnaise, and sugar in another bowl. Toss until everything is combined well.
  3. Toast the brioche or potato buns in a pan with butter until golden brown.
  4. Once the chicken is done, slice it and place it on the toasted buns. Top with the zesty cabbage slaw.

Notes

Serve the sandwiches warm, with extra slaw on the side for a refreshing crunch. You can also add some pickled vegetables for extra tang, if desired. Marinate the chicken overnight for even more flavor. Feel free to adjust the spice level by adding more or less gochujang. Use a food processor to shred vegetables quickly.
