Ingredients
  

For the marinade and chicken
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 pieces limes Juice of
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • to taste Salt and pepper
For serving
  • 2 pieces ripe California avocados, sliced Make sure they are ripe for best flavor
  • 1 cup cherry tomatoes, halved
  • to taste Fresh cilantro for garnish Optional

Method
 

Preparation
  1. In a bowl, whisk together lime juice, olive oil, garlic powder, chili powder, salt, and pepper.
  2. Place the chicken breasts in a resealable bag and pour the marinade over them. Seal and marinate in the refrigerator for at least 30 minutes.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Remove chicken from the marinade and grill for 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
  3. During the last few minutes of grilling, place avocado slices on the grill to warm them slightly.
  4. Once the chicken is done, remove from the grill and let it rest for a few minutes before slicing.
Serving
  1. Serve the grilled chicken topped with avocado slices and fresh tomatoes. Garnish with cilantro if desired.

Notes

Juicy grilled chicken pairs nicely with a side of rice, salad, or grilled vegetables. Avoid reheating the avocado as it may lose its texture. You can add more spices or herbs to the marinade for extra flavor.
