Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • To taste Salt and pepper
For the Mango Salsa
  • 1 mango, diced Fresh mango recommended for better flavor.
  • 1/2 red onion, diced
  • 1 jalapeño, minced (optional) Adjust amount for desired heat.
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced

Method
 

Marinating the Chicken
  1. In a bowl, mix honey, lime juice, olive oil, salt, and pepper. Marinate the chicken in this mixture for at least 30 minutes.
Cooking the Chicken
  1. Preheat the grill or oven to medium-high heat.
  2. Grill or bake the chicken for about 6-7 minutes per side or until fully cooked.
Preparing the Salsa
  1. In another bowl, combine diced mango, red onion, jalapeño, cilantro, and lime juice to make the salsa.
Serving
  1. Serve the grilled chicken topped with mango salsa.

Notes

For more flavor, marinate the chicken for a longer time, up to 2 hours. Use fresh mango for the salsa for better taste. Ensure the grill is hot before placing the chicken to get nice grill marks.
