Ingredients
  

For the Chicken
  • 1 lb chicken breasts (boneless, skinless) Cut into pieces for stacking
  • 1/4 cup honey
  • 2 limes (juiced) Adjust for taste
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper (to taste)
For the Rice Stack
  • 1 cup rice (uncooked) Prepare according to package directions
  • 1 avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream

Method
 

Marination
  1. In a bowl, whisk together honey, lime juice, chili powder, cumin, salt, and pepper.
  2. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.
Rice Preparation
  1. Prepare 1 cup of rice according to package directions. Once fluffy, set aside to cool.
Cooking Chicken
  1. Heat your grill or skillet over medium heat.
  2. Cook the marinated chicken for about 6-7 minutes on each side until browned.
  3. Let it rest before slicing.
Assembling the Stack
  1. In a large bowl, combine the cooked rice, diced avocado, chopped cilantro, and sour cream.
  2. Gently fold everything together until well mixed.
  3. Serve by spooning a scoop of the creamy avocado rice on plates, topped with sliced honey lime chicken.
  4. Drizzle extra lime juice over the top.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave. Marinating the chicken longer enhances flavor. Use leftover rice to save time. For extra spice, add cayenne pepper to the marinade.
