Method
Marinade Preparation
- In a bowl, mix together olive oil, soy sauce, honey or maple syrup, minced garlic, and grated ginger.
Chicken Marinade
- Add the chicken cubes to the marinade. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes in the fridge.
Skewer Preparation
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
Preheat Grill
- Preheat your grill to medium-high heat.
Assemble Kabobs
- Thread the marinated chicken, pineapple, bell pepper pieces, and red onion onto the skewers. Alternate the ingredients for a colorful mix.
Grill Kabobs
- Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Sauce and Finish
- Brush your favorite BBQ sauce onto the kabobs in the last few minutes of grilling for a delicious glaze.
Rest and Serve
- Once cooked, let the kabobs rest for a few minutes before serving.
Notes
Marinate the chicken longer for more flavor, ideally overnight if you have the time. Use a variety of vegetables to add texture and flavor to the kabobs. For a spicy kick, add jalapeƱo slices to the skewers. Keep the grill lid closed while cooking to maintain even heat.
