Method
Preparation
- In a bowl, mix the olive oil, chili powder, smoked paprika, ground cumin, garlic powder, onion powder, dried oregano, salt, and black pepper. Add the chicken and coat it well with the spice mixture.
Cooking
- Heat a skillet over medium heat. Add the seasoned chicken and cook for about 5-7 minutes per side or until it is fully cooked and has a nice golden brown color. The internal temperature should reach 165°F (75°C).
Resting and Slicing
- Once the chicken is done, remove it from the skillet and let it rest for a few minutes. Then, slice the chicken into small pieces or strips.
Warming Tortillas
- In the same skillet, warm the corn tortillas for about 30 seconds on each side or until they are flexible and heated through.
Assembling Tacos
- On each tortilla, add a portion of sliced chicken. Top with chopped onion, cilantro, and any additional toppings like avocado and cotija cheese. Squeeze fresh lime juice on top and serve with your favorite salsa.
Notes
For deeper flavor, marinate the chicken in the spice mixture for a few hours or overnight. Use fresh ingredients for the best taste, and feel free to experiment with various toppings.
