Ingredients
  

For the Marinade
  • 1 lb boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • to taste Salt and pepper
For Assembling Tacos
  • 8 small corn tortillas
  • 1/2 cup diced onion
  • 1/2 cup chopped fresh cilantro
  • as needed Lime wedges for serving

Method
 

Preparation
  1. In a mixing bowl, combine olive oil, lime juice, and spices. Mix well to create a marinade.
  2. Add chicken thighs to the marinade and coat thoroughly. Allow to marinate for at least 15 minutes to absorb the flavors.
Cooking
  1. Heat a cast iron skillet or grill over medium-high heat.
  2. Cook the chicken for 6–7 minutes on each side until it is fully cooked and has a nice char.
  3. Let the chicken rest for a few minutes before chopping it into bite-sized pieces.
  4. Warm the tortillas on the skillet or over a flame until they are pliable.
Assembly
  1. Assemble the tacos by filling the tortillas with chopped chicken, diced onion, cilantro, and a squeeze of lime.

Notes

Marinating the chicken for longer than 15 minutes will give it even more flavor. Don't skip the fresh cilantro; it adds a refreshing taste. Warm the tortillas before filling them to prevent tearing and make them more enjoyable to eat.
