Ingredients
  

For the chicken marinade
  • 1 lb Chicken thighs or breasts, boneless skinless
  • 2 tbsp Olive oil For marinade
  • 2 tbsp Lime juice Freshly squeezed
  • 1 tsp Cumin Ground
  • 1 tsp Chili powder Or more for heat
  • ½ tsp Smoked paprika Adds depth
  • ½ tsp Garlic powder
  • ½ tsp Salt
  • ¼ tsp Black pepper
For assembly
  • 4 large Flour tortillas Burrito-size
  • 2 cups Cooked rice White or brown
  • 1 can Black beans 15 oz, rinsed & drained
  • 1 cup Cheddar cheese Shredded
  • 1 cup Pico de gallo Fresh
  • ½ cup Sour cream Or Greek yogurt
  • 1 whole Avocado Sliced or guacamole
  • 1 cup Lettuce Shredded
  • 2 tbsp Fresh cilantro Chopped
  • to taste Hot sauce Optional
  • to taste Pickled jalapeños Optional
  • to garnish Cotija cheese Optional
  • for serving Lime wedges

Method
 

Preparation
  1. Marinate the chicken with olive oil, lime juice, cumin, chili powder, smoked paprika, garlic powder, salt, and black pepper. Let it sit for about 30 minutes to soak in the flavors.
  2. While the chicken marinates, heat the tortillas in a microwave or on a skillet until soft and pliable.
Cooking
  1. Grill or pan-sear the chicken in a skillet until fully cooked, about 6-8 minutes per side.
  2. Once the chicken is done, slice it into bite-sized pieces.
Assembly
  1. To assemble the burritos, layer the cooked rice and black beans first on the tortilla.
  2. Add the sliced chicken, cheddar cheese, pico de gallo, sour cream, avocado, lettuce, and cilantro.
  3. Wrap the tortillas tightly around the filling, tucking in the edges as you roll.
Serving
  1. Serve with lime wedges and your favorite hot sauce or pickled jalapeños if desired.

Notes

Chicken burritos are best served warm. You can cut them in half to make them easier to eat. Pair them with extra sides like chips and salsa or a fresh salad to complete your meal.
